Still alive. Spring fever is keeping me busy.

Let’s see. I have multiple things to be happy about this spring:

-Bought a new bike. It’s beautiful, classy and brown. I need to ride it more.

-Working on an art journal. Central theme= positive energy. Probably going to end up with a lot of quotes and doodles. I’ll continue to post the parts I like. :P

-Becoming even more crazy about sustainable living. It makes me want to get out of here and go wwoof as soon as possible. I know for sure I want to check out mushroom farming in Oregon and help with a cranberry harvest. Pomegranates are way cool too.

Daydreaming about perfect gardens and chickens. Crazy grafted fruit trees. Olives. Avacados. Sprouts. Dandelion wine. Forest gardens. Floating succulent planters. Bees.

-Work. Work. Work. Tacos.

-The liberating feeling of taking a hatchet and cutting down a tiny tree in the woods near my house. (And the miraculous revelation that life will never be as easy or as square as Minecraft.)  A tiny summer project so I can have some sort of walking stick/hippie spirit staff thing. Because I can.

-Reading again. For like the first time in ages.  I really want to review both the books when I’m finished with them.

-Built a cute “rustic” looking garden bed. Made from a pallet me and my best friend “rescued”.

-My etsy shop has had three sales. I literally just shipped today. I’m really excited. Probably more excited than the beautiful people on the receiving end. Finally getting myself set up on etsy gave me more satisfaction than getting a high school education. Next step. Art/craft shows. Kansas city. Business cards.

-Gaea Earth Day festival. Excited for camping, sun, people and good vibes.

So very excited to start a positive energy/art journal. I’m going to fill it with inspirational quotes and phrases. I’ll keep posting pictures as I make it.

I think I found myself in a pot of curry.

 
This recipe is vegetarian and gluten free. If you remove the yogurt, and replace it with more coconut milk (Or maybe some vegan sour cream?), it becomes vegan.

Spicy coconut curry with red cabbage and mushrooms

============================================================

-Olive oil

-Bean sprouts, a pretty good handful

-About 1 large handful of Red cabbage, roughly chopped

-1 green onion, chopped.

-About 5-6 button/ portabella mushrooms

-1 small clove of garlic, minced

-1/2 jalapeno, diced

-2 small tomatoes, diced.

-1 can of coconut milk (Don’t shake it, you need it to separate.)

-1 6 oz container of chobani greek yogurt (Any kind, I used blood orange.)

-1/4 teaspoon of Ground Chipotle chili powder

-1 Tablespoon of Curry powder

- 1 cup of rice (rice cooker cups)

-salt

Servings: 2-3

First of all, I’d like to go ahead and point out that I made this in a rice cooker! If you’re living in a dorm or a situation like my own, you don’t actually need a kitchen to make this.

For the rice:

Open up your can of coconut milk. Separate liquid from the coconut cream.

Pour 1 (rice cup) of coconut milk, 1 cup of rice and 1 (rice cup) of water and about a pinch of salt into your rice cooker and push the button to cook.

When your rice is finished, remove the rice and set aside.

For the sauce:

Mix your chopped veggies together in the rice pot, coat with olive oil and push the button back down to cook. Stir occasionally, until cabbage is tender. Then mix in the yogurt, the coconut cream and any leftover coconut milk. Add in the curry powder and chipotle powder and salt to taste. Let simmer for about ten minutes.

I’m really stoked to be experimenting again. I don’t think I realized how much I express myself through cooking. Something this simple can give me such a great amount of joy. If anyone else makes this, please let me know how it was!

So unbelievably excited to see Andrew Bird at the Uptown Theater in KC on March 23rd. Equally excited for Andrew Bird’s next album to come out on March 6th. 2012 is looking like a very musical year.
